Ingredients:

• 4 large onions, thinly sliced
• 2 tablespoons of oil (vegetable or olive oil)
• 1 liter of vegetable broth
• 1 tablespoon of sugar
• 1 tablespoon of flour (for thickening)
• 1 teaspoon of thyme (fresh or dried)
• 2 bay leaves
• Salt and pepper to taste
• 4 slices of toast bread
• 100g of grated cheese (e.g., Parmesan or Cheddar) (optional)

Instructions:

1. Heat the oil in a pot over medium heat. Add the onions and cook, stirring occasionally, until they become soft and golden (about 15-20 minutes).
2. Add the sugar and cook for a few more minutes to caramelize the onions.
3. Stir in the flour and mix well to form a paste.
4. Gradually add the vegetable broth, stirring constantly to prevent lumps. Add the bay leaves and thyme.
5. Simmer the soup on low heat for 20-30 minutes, stirring occasionally. Season with salt and pepper to taste.
6. While the soup is cooking, toast the bread until golden.
7. Serve the soup in bowls, adding a slice of toast and sprinkling with grated cheese (if using).
