Pepper Casserole 

Ingredients:
3 bell peppers (red, yellow, or green) 
1 onion, chopped 
2 cloves garlic, minced 
1 cup cooked rice 
1/2 lb ground meat (or mushrooms for a veggie option) 

1 cup tomato sauce 
1 tsp paprika 
Salt & pepper to taste 
Instructions:
Sauté onions and garlic in a pan until soft.
Add ground meat (or mushrooms) and cook until browned.
Stir in rice, tomato sauce, and paprika. Simmer for 5 minutes.
Cut peppers in pieces, remove seeds, and mix them with the mixture.
Bake at 375°F (190°C) for 20 minutes.
